Ingredients
  

For the Pasta
  • 8 ounces pasta penne, rotini, or your favorite shape
  • water for boiling
  • salt for boiling
For the Caesar Sauce
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1 tsp Dijon mustard
  • 1/4 tsp black pepper
  • 2 tbsp milk or more if wanted
Optional Toppings
  • grilled chicken or shrimp
  • cherry tomatoes halved
  • croutons
  • grated Parmesan cheese
  • fresh parsley chopped

Method
 

  1. Cook the pasta according to package directions. Drain and set aside.

  2. While the pasta is cooking, prepare the Caesar Pasta sauce. In a medium bowl, whisk together the Greek yogurt, Parmesan cheese, lemon juice, olive oil, garlic, Dijon mustard, and black pepper. Add the milk to reach desired consistency.

  3. Add the cooked pasta to the bowl with the sauce and toss to coat thoroughly, ensuring every strand of pasta is touched by that delicious Caesar Pasta goodness.
