  • 1 tbsp olive oil
  • 1 pound breakfast sausage crumbled
  • 1 medium onion chopped
  • 1 bell pepper any color, chopped
  • 1 cup sliced mushrooms
For the Egg Mixture
  • 6 large eggs
  • 1/4 cup milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
Toppings (Optional)
  • 1 cup shredded cheddar cheese
  • chopped fresh parsley or chives
  • hot sauce

Method
 

  1. Heat olive oil in a large, oven-safe skillet over medium heat.

  2. Add crumbled sausage and cook until browned, breaking it up with a spoon. Drain excess grease.

  3. Add onion, bell pepper, and mushrooms to the skillet. Cook until vegetables are tender, about 5-7 minutes.

  4. In a separate bowl, whisk together eggs, milk, salt, and pepper.

  7. Sprinkle shredded cheddar cheese over the top of the skillet.

  8. Place the skillet in a preheated oven at 350°F (175°C) and bake for 10-15 minutes, or until the eggs are fully set and the cheese is melted and bubbly.
  9. Remove from oven and let cool slightly before serving.
