Ingredients
  

  • 6 Egg Whites large
  • 1/4 cup Red Bell Pepper diced
  • 1/4 cup Green Bell Pepper diced
  • 1/4 cup Onion diced
  • 1/4 cup Turkey Sausage Cooked and Crumbled (or vegetarian alternative)
  • 1/4 cup Shredded Cheddar Cheese (or cheese alternative)
  • 1 tablespoon Fresh Chives chopped
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with cooking spray.
  2. In a large bowl, whisk together the egg whites, salt, and pepper.
  3. Add the diced red bell pepper, green bell pepper, onion, and cooked turkey sausage to the bowl. Mix well to combine.
  4. Evenly distribute the mixture into the prepared muffin tin cups.
  5. Sprinkle the shredded cheddar cheese evenly over the top of each muffin cup.
  6. Bake in the preheated oven for 18-20 minutes, or until the Egg White Breakfast Bites are set and lightly golden brown.
  7. Remove from the oven and let cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  8. Garnish with fresh chopped chives before serving.
