- Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with cooking spray.
- In a large bowl, whisk together the egg whites, salt, and pepper.
- Add the diced red bell pepper, green bell pepper, onion, and cooked turkey sausage to the bowl. Mix well to combine.
- Evenly distribute the mixture into the prepared muffin tin cups.
- Sprinkle the shredded cheddar cheese evenly over the top of each muffin cup.
- Bake in the preheated oven for 18-20 minutes, or until the Egg White Breakfast Bites are set and lightly golden brown.
- Remove from the oven and let cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
- Garnish with fresh chopped chives before serving.
