Ingredients
  

For the Scramble:
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 1 cup cooked black beans drained and rinsed
  • 1 cup scrambled eggs (about 4 large eggs)
For the Southwest Flavor:
  • 1/4 cup salsa (your favorite kind)
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
For the Burritos:
  • 4 large flour tortillas
  • 1/2 cup shredded cheddar cheese

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and bell pepper. Cook until softened, about 5 minutes.
  3. Stir in cooked black beans and spices (chili powder and cumin). Cook for another minute.
  4. Pour scrambled eggs into the skillet. Cook until eggs are set, stirring occasionally.
  5. Stir in salsa. Mix well.
  6. Warm flour tortillas.
  7. Divide the egg mixture evenly among the tortillas.
  8. Sprinkle cheddar cheese over the egg mixture.
  9. Fold in the sides of the tortilla, then fold the bottom up and over to create a burrito.
  10. Serve immediately with your favorite toppings.

Notes

Sauté the vegetables until they're slightly caramelized to bring out their natural sweetness. For a richer flavor, use chorizo instead of regular sausage. Don't overcook the eggs – they should be soft and slightly moist. Warm the tortillas in a dry skillet or microwave to make them pliable and prevent tearing.
